Bored of making banana bread? This week, why not make Mr Pickard’s (Chef Manager) simple and chewy banana flapjack recipe!

Ingredients

250g Unsalted butter

250g Brown sugar

125g Golden syrup

500g Rolled oats

1 tbsp Vanilla essence

3 Bananas

Method

  1. Place butter, sugar, golden syrup and oats in a pan and on a medium heat melt the ingredients and stir together. 
  2. Add the oats, vanilla essence and bananas and mix to a thick consistency.
  3. Transfer to a lined baking dish. A depth of 1.5 inches would be ideal but thicker if you require.
  4. Bake at 150degrees for approximately 20 mins. Times may vary according to depth of flapjack.
  5. When the top is a golden-brown colour remove from the oven and leave to cool slightly, be careful as the flapjack will be extremely hot.
  6. Cut into portions whilst it is still warm as it will be a lot easier to cut through. Size depends on how much of a sweet tooth you have and whether you want to share with others or not.
  7. Make yourself a nice cup of coffee and enjoy the fruits of your labour.
