Our wonderful Food and Nutrition team has joined forces with the Greens Kitchen to run a competition for our Year 8 Food Nutrition students.
Our Chef Manager, Mr Pickard, spent time with the students demonstrating cooking a Thai Tofu Stir Fry while talking to them about the many factors that need to be considered when creating a dish for the Greens Kitchen counters: how well does it upscale - can it be made for mass numbers? The nutritional content, the serving environment - how easy is it to serve, and how would it hold out under the hot lamps during service? The students needed to show they had taken all of these factors on board and then create a recipe card with a reason why they feel the dish would work for Greens. The winning dish would then have pride of place in the Greens three-week menu rotation.
The winning dish was created by Natalie Tshuma (8RMF) - Garlic Honey Chicken. This dish won because it was a great-looking dish, all factors had been taken on board with regards to the serving environment, and we knew it would be popular.
The dish is featured on Thursday in week one’s menu. The students really enjoyed it. Have a go at making it at home with this recipe and let us know what you think.
