With Christmas just around the corner I have shared some lovely 'leftover' recipes perfect for a boxing day feast and a wonderful way to use up any food to save it heading to landfill.

We have a Boxing Day tradition in our house where Bubble and Squeak is served for our Boxing Day lunch, I think it's the absolute perfect leftover recipe. The beauty of this dish is to experiment with it, add any leftover veg you have, chop up any roast pots and add in. We like to have ours with poached eggs, any leftover roast meat or sausages and plenty of piccalilli.
