To celebrate the Queen's Platinum Jubilee, our Greens kitchen has been hard at work recreating the official Jubilee dessert, Lemon Swiss Roll Trifle.

For those that followed the competition to select the winner knows the original dessert contains nuts, being a nut free school, we adapted the menu!

The great thing with this recipe is you can make everything from scratch or you can pick and choose which elements you make and which you buy in to save time. Most supermarkets do a lemon flavour Swiss Roll, lemon curd, orange jelly can be used instead of St Clements and brought custard.
