Whole School The Green Kitchen

In celebration of World Afro Day on Friday 15th September, the Greens Kitchen have dedicated the week to showcasing and celebrating cuisines from Africa and the Caribbean.

Every day we have showcased a dish alongside our Winter menu items and on Friday we had a whole menu take over! The dining hall was decorated with African and Caribbean flags, native music playing and a full menu dedicated to traditional dishes from African and Afro-Caribbean countries.

Mrs Tombs (Deputy Catering Manager) and Mr Pickard (Catering Manager) spent time with our Diversity and Inclusion Committee to discuss menus, the students provided traditional recipes that they make at home and put together a music playlist for the students to listen to during lunch time.

Mrs Tombs has shared some recipes with you to have a go at home, on the main counters we had a crowd pleaser that was Jamaican Jerk Chicken Thighs with Mango Salsa, the components separately are delightful but put together they’re a completely different experience. Perfectly balanced, spicy and sweet, crispy and juicy, bright and smokey. On our dessert counter we had Puff Puff which is a very popular West African street food and dangerously delicious!

If you have a go at these recipes we’d love to see your results at The Greens Kitchen @BGS_Greens here.
